Bibanesi are chunky breadsticks that are hand stretched, giving each piece an individually unique shape. They are crispy with a light and flavorful taste that is elevated by extra virgin olive oil. In 1989, Da Re Spa developed Bibanesi as a solution to satisfy the growing demand for their product in larger areas. Their design was a radically new product that was halfway between bread and breadsticks that would also retained the fragrant and wholesome characteristics of home-made bread. These chunky breadsticks are made using sourdough with slow yeast: a mixture of flour, water, and yeast prepared the day before, and left to rest for at least 24 hours. The sourdough is then kneaded with the recipe ingredients into a final mixture, which undergoes further leavening stages. The dough is then hand stretched to avoid the stress it would undergo in a fully automated process. Finally, it is slow baked at low temperatures to obtain the ultimate crunch!
Recommended Use:
Bibanesi makes an excellent snack on their own, or simply wrapped with a piece of prosciutto. They have a multitude of other applications and can be used as croutons for a soup/salad, crumb-coating for baked or fried foods, and incorporated in a dessert or pie crust.
